This quick and easy recipe is suitable for breakfast and/or brunch when you want to take it easy, but want to eat something delightful.
This recipe is:

For specifically this quick tomato sauce, I make from fresh tomatoes without adding water, instead of canned whole tomatoes, so it's packed well with fresh tomato flavor.
To make, dice your tomatoes, mince onions and garlic first. Then cook garlic and onion in a pot. Toss diced tomatoes into the pot to simmer. Add salt and pepper to taste at the very end of cooking.

It's a simple recipe and ingredients, but it is delicious!

For vegan sausages, I use Yves Veggie Cuisine Canada


This sausage tastes more like fish sausage that I used to eat when I was kid back in Japan. So it was so nostalgic and surprising to me! Although I said it's like fish sausage, I honestly like it, beside the feelings of nostalgia.
Other than taste, there's one more thing that I like about this product. This has no artificial flavors, GMO foods or other chemical ingredients that I always avoid if possible. Only concern is carrageenan which has a potential health issue linked to cancer. However, I wouldn't say that eating occasionally like once in a while is bad, though my recommendation is still to avoid consuming as much as possible!

Vegan Pan-Fried Vegan Sausage with Quick Easy Tomato Sauce
INGREDIENTS (5 Servings)
[TOMATO SAUCE]
5 tomatoes, 1cm cubed
1/2 onion, minced
3 cloves garlic, minced
Avocado oil
1 tablespoon white wine
Himalayan pink salt
Black pepper

[TOPPINGS]
Zucchini, thick sliced
Mushrooms, cut in 4
Brussels Sprouts, cut in 4
Vegan sausages

INSTRUCTIONS
  1. In a small pot, heat avocado oil and add in minced garlic to cook until fragrance.
  2. Add in onion and stir fry until translucent.
  3. Add cubed tomatoes into the pot, then smash with a wooden spoon into pieces.
  4. Add white wine.
  5. Simmer until water from tomatoes evaporates and thickens.
  6. Stir occasionally.
  7. When thickened, add salt and pepper to taste.
  8. Scoop the sauce on a serving plate, put 3 pieces of pan-fried vegan sausages on top.
  9. Garnish with pan-fried zucchini, mushrooms and Brussels Sprouts if desired.
  10. Enjoy!
