Vegan Stir-Fried Tofu and Veggies

This recipe is super easy, but so delicious! It's suitable for those of you want to cook quick with no complicated instructions. There're some days that I want to go easy, and whenever I feel that way, I do stir-fry. It only takes about 30minutes or even less to finally serve the plate. Although it's cooked super fast, it is a lot flavourful than you'd expect! And the more you add vegetables, the more it could be nutrient-dence! Tofu is a plus for obtaining mainly protein.

There's no hidden tips or special skills needed, but if you want to make a good stir-fried veggies, cook veggies over high heat so the dish doesn't become watery or soggy.

Pan Frying Tofu

First, you should pan-fry your tofu coated with corn starch in a generous amount of oil. So when stir frying veggie together you don't break apart tofu. Then season with mirin and soy sauce or tamari for gluten free.

Vegan Stir-Fried Tofu and Veggies
INGREDIENTS (3 Servings)
[TOFU]
1 or 360g tofu, rectangularly sliced
1/4 cup corn starch
Avocado oil
2 tablespoons mirin or maple syrup
3 tablespoons soy sauce or tamari for gluten free

3 cloves garlic, minced
1 tablespoon ginger, minced
Avocado oil
1 onion, sliced
2 mushrooms, sliced
3 bunches gai lan, chopped in 1 inch
4 cups spinach, chopped
1 tablespoon soy sauce or tamari for gluten free

INSTRUCTIONS
  1. In a large bowl, put cornstarch and tofu to coat evenly.
  2. Heat your frying pan, then cook the coated tofu over medium high heat.
  3. When golden brown, add mirin and soy sauce and caramelize.
  4. In a large frying pan, heat oil and add in garlic and ginger to cook until fragrance.
  5. Add onions and cook over high heat.
  6. WHen onions become translucent, add in mushrooms and gailan stems.
  7. Stir fry until cook.
  8. When it's cooked, add in prepared tofu and soy sauce to stir fry for 1 or 2 minutes.
  9. Adjust the taste to your liking at this point.
  10. Turn off the heat. Add in gai lan leaves and spinach and combine well.
  11. Don't over cook leaves.
  12. Enjoy!

NOTES
◎Stir fry over high heat to prevent from soggy and watery texture.
