Kale is very super nutrient-dense vegetable! It has high amounts of fiber, vitamin C, A, K, B6 and magnesium! Despite the high nutrient contents, it's not for everyone's loving vegetable. Perssonally I was the one who didn't like kale a long time ago, to be honest, because it tastes too bitter and too fibrous for my liking.
But guess what?
I loooove kale now!!!
Kale is my staple vegetable in my fridge! I never run out of kale :)
Not only do I love cooked kale, but also I even love to eat raw kale as salad! Yes, I overcame the humble kale!
How did my taste bud change?
It's a trick.
Kale leaves can become soft and less fibrous when you do one extra thing before assembling everything together :)
- Massage kale with a little bit of olive oil.
Believe me, this method makes a huge difference in taste and texture! It breaks down kale's fibrous characteristic! And most importantly, it will help us digest easily!
This might blow away your mind who don't like kale because of the taste/texture.
It is absolutely worth giving it a shot!
Regarding my homemade sesame dressing, the easiest way is to make it in a little jar that you're going to store the dressing, so you can save your time without washing a tiny bowl and other cooking tools.
I put all ingredients in this jar and shake it well. That's that simple :)
This sesame dressing goes perfect with orange peels! If you have some fresh orange, then grate the skin or slice up the skin thinner and top on kale!
For orange peels, I stock up orange skin in a jar whenever I buy fresh oranges. It will last for about 2 weeks in a fridge :)
Or you can sprinkle some homemade vegan parmesan cheese over the salad instead :)

4 bunches kale, chopped
6 cherry tomatoes, halved
1/8 orange skin, sliced
1 tablespoon olive oil
[SESAME DRESSING]
3 tablespoons vinegar
1 tablespoon soy sauce
1 tablespoon maple syrup
1 pinch Himalayan pink salt
Ground sesame seeds
- Toss kale and olive oil into a large bowl.
- Massage kale with your hands well.
- Kale eventually shrink into half.
- Combine kale with orange peels and tomatoes.
- Set aside.
- [SESAME DRESSING]
- In a small jar, put all ingredients and shake it well to mix.
- Plate kale salad and drizzle the dressing in a bowl.
- Enjoy!
