Have you heard of Dan Dan Ramen?
Dan Dan is spicy peanut sauce that goes well usually with any noodles from egg noodles, udon noodles, to rice noodles. Anyone feels like eating rice today? This peanut sauce recipe tastes really so so sooooo good when it comes together with brown rice!
It's creamy, a bit spicy, and peanuty. I believe everyone would love this sauce. If you're not a fan of sicy food, you can adjust the spiciness to your taste!
Originally this recipe was inspired by my lovely co-worker's dan dan sauce and I veganized it. I found it pretty easy to make and so delicious! Like I can't stop eating it haha
On the left in the picture, there's a bunch of little tiny brownish thing. This is my homemade soy meat made from dried tofu called Koya tofu.
You can find it at a Japanese grocery store or asian grocery store, if there's any around you. But if you can't find it, you can substitute that with regular tofu. Freeze completely first, then thaw to drain as much water as possible by squeezing.
This recipe is the best one so far that looks like real meat and has similar texture to meat.
This is my go-to nut butter brand made in Canada!

1 tablespoon oil part of chili oil
2 garlic cloves, grated
1/2 tablespoon ginger, grated
1/2 onion, minced
2 cups kombu stock
1 tablespoon white wine
3 tablespoons mirin or maple syrup
1/2 tablespoons maple syrup
1/4 cup peanut butter
2-3 tablespoons soy sauce or tamari for gluten free option
[TOPPINGS]
Homemade soy meat
Boiled kale
Boiled spinach
Shredded red cabbage
Cooked brown rice or noodles
- In a pot, put chili oil, garlic and ginger, and cook over medium heat.
- When fragrant, add onion to cook until translucent.
- Pour kombu stock, white wine and mirin.
- Bring to a boil.
- Add maple syrup, peanut butter and soy sauce and combine together until peanut butter melts.
- Adjust spiciness by adding more chili oil.
- Simmer over medium-low heat until thickens.
- When the sauce is thickened enough, place your brown rice/noodles, kale, spinach, shredded cabbage on a bowl and pour in the peanut sauce.
- Enjoy!
