【Vegan🌱Kale and Spinach Savory Muffins】
I've been baking sweets for a long time and haven't made something goes perfectly well with vegetables at breakfast and/or snack time until I discovered this muffin recipe!
This recipe is:
- Vegan
- Refined sugar free
- Nut free
Put olive oil, maple syrup, dried basil, dried oregano, Himalayan pink salt, cayenne pepper and paprika powder into a bowl. And combine well.
Make dough by adding whole wheat flour, baking powder, corn meal and water.
Add in kale, spinach and vegan cheese.
For whole wheat flour, I always get Anita's flour which is all organic and non-GMO. Highly recommended!
Scoop muffin dough into a baking pan, sprinkle some vegan cheese and drizzle olive oil on top.
Bake.
Let it cool down.
Enjoy!
2 tablespoons olive oil
1 teaspoon maple syrup
1 tablespoon dried basil
1/2 tablespoon dried oregano
1/2 teaspoon Himalayan pink salt
1 teaspoon cayenne pepper
1 teaspoon paprika powder
4 cups whole wheat flour
1/4 cup corn meal if desired
2 1/2 cups water
1 piece of kale, chopped
1 piece of spinach, chopped
1/4 cup vegan cheese
- Preheat oven to 355°.
- In a bowl, put olive oil, maple syrup, dried basil, dried oregano, cayenne pepper and paprika powder to mix together.
- Add in whole wheat flour, baking powder and corn meal and combine well.
- Pour in water little by little.
- Add chopped kale and spinach, and vegan cheese.
- Scoop muffin dough into a baking muffin pan.
- Sprinkle extra vegan cheese and drizzle olive oil on top.
- Bake in a preheated oven for at least 20-30 minutes until fully baked.
- Take out from the oven and let it cool.
- Take out from the pan and enjoy!
