I've been baking sweets for a long time and haven't made something goes perfectly well with vegetables at breakfast and/or snack time until I discovered this muffin recipe!
This recipe is:

  • Vegan
  • Refined sugar free
  • Nut free

Put olive oil, maple syrup, dried basil, dried oregano, Himalayan pink salt, cayenne pepper and paprika powder into a bowl. And combine well.

Make dough by adding whole wheat flour, baking powder, corn meal and water.
Add in kale, spinach and vegan cheese.
For whole wheat flour, I always get Anita's flour which is all organic and non-GMO. Highly recommended!

Scoop muffin dough into a baking pan, sprinkle some vegan cheese and drizzle olive oil on top.
Bake.

Let it cool down.

Vegan🌱Kale and Spinach Savory Muffins
INGREDIENTS(6 muffins)
2 tablespoons olive oil
1 teaspoon maple syrup
1 tablespoon dried basil
1/2 tablespoon dried oregano
1/2 teaspoon Himalayan pink salt
1 teaspoon cayenne pepper
1 teaspoon paprika powder
4 cups whole wheat flour
1/4 cup corn meal if desired
2 1/2 cups water
1 piece of kale, chopped
1 piece of spinach, chopped
1/4 cup vegan cheese

INSTRUCTIONS
  1. Preheat oven to 355°.
  2. In a bowl, put olive oil, maple syrup, dried basil, dried oregano, cayenne pepper and paprika powder to mix together.
  3. Add in whole wheat flour, baking powder and corn meal and combine well.
  4. Pour in water little by little.
  5. Add chopped kale and spinach, and vegan cheese.
  6. Scoop muffin dough into a baking muffin pan.
  7. Sprinkle extra vegan cheese and drizzle olive oil on top.
  8. Bake in a preheated oven for at least 20-30 minutes until fully baked.
  9. Take out from the oven and let it cool.
  10. Take out from the pan and enjoy!
