I've been making this tomato sauce for a long time, but I added some soybean meat this time to make bolognese pasta🍝
This recipe is:

  • Vegan
  • Gluten Free
  • Sugar Free

If you're allergic or sensitive to gluten, use gluten free pasta noodles such as rice noodles, 100% buckwheat noodles, glass noodles and quinoa noodles.
Ingredients are really simple that you can make it with something you have in your fridge. Any dried herbs like oregano and store-bought vegetables stock are NOT needed!
So some of you could start cooking from even now for dinner!

On my boyfriend's birthday, I made this pasta for him as I called it "Italian Special Lunch" and he, as non-vegan, really loved it and stuffed his stomach with the pasta✨ That did truely make me happy!!! I think that hearing from people who tried my food and told me it was delicious is one of the happiest moments in my life! This strives me to create something new!

Vegan🌱Bolognese Pasta
INGREDIENTS (2-3 Servings)
[SOYBEAN MEAT]
80g soybean meat
1 tablespoon sake or white wine
1 tablespoon mirin or maple syrup
2 tablespoons tamari
Avocado oil

[TOMATO SAUCE]
Olive oil
1 onion, minced
5 garlic cloves, minced
1/2 carrots, minced
Himalayan pink salt
Black pepper 
800ml canned whole tomato
(1 tablespoon white wine)

Cooked pasta noodles
Vegan parmesan cheese
Fresh basil leaves

INSTRUCTIONS
  1. In a bowl, add soybean meat, sake, mirin and tamari and marinate at least for 2 hours.
  2. Heat a frying pan with avocado oil, and add in marinated soybean meat.
  3. Stir fry until water evaporate.
  4. Transfer to a plate for later use.
  5. Heat a large frying pan, add olive oil and garlic, and cook over medium heat until fragrant.
  6. Add minced onion and cook until golden brown.
  7. Add pre-cooked soybean meat and stir fry.
  8. Toss minced carrots and stir until carrots are coated with oil.
  9. Season with salt and black pepper.
  10. Add canned whole tomato including juice, smashing the tomatoes into pieces.
  11. Pour white wine.
  12. Simmer over medium low heat for approximately 30 minutes until water evaporate.
  13. Adjust the taste to your liking with salt and pepper.
  14. Add cooked pasta noodles into the tomato sauce and stir well.
  15. Plate the pasta noodles, and top with tomato sauce, sprinkle vegan parmesane cheese and put fresh basil leaves on it.
  16. Enjoy!

NOTES
◎Just simmer well tomato sauce until thickened.
