Mexican cuisine is my boyfriend's favorite!
Fjitas are originally made of meat and vegetables with spices, but I veganized it so that vegans can also enjoy this amazing food!

As a meat alternative, I used soybean meat from Daizu Labo, Japanese food manufacture company.
Since it smells like soy beans a bit, I did some preparation for meat to remove soy bean smell, in advance.

  • Marinate overnight soy bean meat in soy sauce, garlic, ginger, mirin, sake and maple syrup.
  • Stir fry only soy bean meat before actually cooking with vegetables.

These 2 keys are what you should do if you have time for the better taste! :)
Or you can absolutely use your favorite meat alternatives that don't bother your taste buds! I did this only because the smell from meat wasn't what I wanted.

Fajitas that I'm sharing now with you was one of the Mexican dishes that I made for my boyfriend's birthday✨
His wish was "to eat a lot of food until he can't put any more food in his stomach" So I did it!
By the way, these are all vegan, needless to say🌱🌱🌱

Regarding tortillas, it is locally made. Indian Life, in Burnaby where is the next city to Vancouver, produces toritillas with use of natural and organic ingredients, including non-GMO. This tortillas is the best one that I've ever tasted so far!

 

Highly recommended buying some of them if you're ever in Vancouver!

This is the recipe card for vegan fajitas.

Vegan🌱Mexican Fajitas
INGREDIENTS (3 Servings)
1 onion, sliced
1 red bell pepper, julienned
2 jalapeno, julienned
5 garlic cloves, minced
1/2 tablespoon oregano
1 tablespoon cumin powder
1/2 tablespoon paprika powder
1 teaspoon or more or less cayenne pepper
1 teaspoon red chili flakes
Avocado oil

[SOY BEAN MEAT]
80g soy bean meat fillet
1 tablespoon ginger, grated
2 garlic cloves, grated
2 tablespoons soy sauce
1 tablespoon mirin
1/2 tablespoon sake
1/2 tablespoon maple syrup
Avocado oil

INSTRUCTIONS
  1. In a small bowl, put soy bean meat, grated ginger, garlic, soy sauce, mirin, sake and maple syrup, and combine well.
  2. Put it in fridge overnight.
  3. In a small bowl, put oregano, cumi, paprika powder, cayenne pepper and chili flakes, and mix together.
  4. In a frying pan, heat avocado oil and add marinated soy bean meat to cook over medium heat until water evaporates.
  5. Set aside for later use.
  6. Heat avocado oil in a frying pan, stir fry onion first over medium heat till translucent.
  7. Add red bell pepper, jalapeno and garlic to cook.
  8. Add spice blend into the pan and cook carefully not to burn.
  9. Add precooked soy bean meat.
  10. Continue stir frying until all vegetables are cooked.
  11. Adjust the taste to your liking.
  12. Enjoy with tortillas!

NOTES
◎Pre-cook soy bean meat if necessary.
