This recipe was inspired by my boyfriend who loves Mexican cuisine. One time, he was begging me for black beans, like he literally told me every day. So I decided to simmer black beans with spice for him so it could remind him of his precious time that he spent in Mexico a long time ago.

I'm not a big fan of beans, but this one tastes really awesome

This recipe is:

  • Sugarless

It takes time to cook beans that you need to soak them in water overnight first, then simmer for approximately 1 and a half hour. You should be patient a bit, but it is worth trying it out!

Black beans are a great source of protein, fiber, folate, manganese and iron. It's okay to eat them alone as a side dish, of course! The best combination is beans and rice. When you eat beans together with rice, the nutrient value may be higher than when you eat them with bread due to rice nutrient components.

While you simmer black beans, water evaporate before they are fully cooked. If that happens to you, pour more water that's the same amount of evaporated water in the pot, then continue simmering until beans are softened.

Mexican Style Black Beans
INGREDIENTS (4 Servings)
200g black beans, soaked overnight
2 cloves garlic, minced
1/2 onion, minced
Avocado oil
1 tablespoon white wine
1-2 tablespoons cumin, ground
Himalayan Pink Salt
Cilantro for garnishing

INSTRUCTIONS
  1. In a pot, heat avocado oil and cook garlic over the medium heat.
  2. When aroma comes out of garlic, add in onion and sautee until it turns golden brown.
  3. Add in black beans and mix well.
  4. Pour water to fully cover black beans into the pot.
  5. Add in white wine.
  6. Simmer for approximately 1 and a half hour until black beans soften.
  7. Add some water if needed.
  8. When beans are cooked and soft, season with Himalayan pink salt and cumin powder, then combine well.
  9. Put the cooked and seasoned black beans into a bowl and garnish with cilantro.
  10. Enjoy!

NOTES
◎Be patient till beans are soft ;)
◎If too watery when you season beans, turn the heat to medium or high to let excessive water evaporate.
