Have you ever attempted making sushi at home before?
If yes or no,
This will make it easier for you!
SInce this is the recipe that I made when I came back home late after work the other day and wanted to make something Japanese for the following day's lunch, it only takes approximately 1 hour, unlike the traditional way of making sushi🍣 (rice cooking time not included). That being said, it tastes absolutely spectacular✨

This recipe is:

  • Vegan
  • Gluten Free
  • Loaded Veggies
  • Highly nutritious
  • A bit western side?

I'm sharing each step as details as possible! So I hope you can try it out at your house whenever you crave sushi ;)

 ◎STEPS◎

  1. Cook Sushi rice.
  2. Pan fry tofu.
  3. Prep for vegetables.
  4. Roll.

STEP 1
Use cooked rice for time-saving.
Warm up your cooked rice if cold, then mix with vinegar sugar mixture.
Let it sit aside to cool down.

STEP 2
Cut your tofu into a bit long rectangular which fits on nori sheet.
Coat every side of tofu with corn starch or potato starch and pan fry in oil.
Whne golden brown, season with sake, mirin and tamari. 
Transfer to a plate and let it cool.

STEP 3
Julienne your vegetables.
In this recipe, you'll find spinach, dried daikon radish, cucumber, yellow bell pepper and avocado.
Use your preferable vegetables :)
For dried radish, it comes in a form of long julienne, so just soak in water for 15 minutes so it doubles, and strain, then cut in short.

STEP 4
Now time to roll up!
First, Tofu Avocado sushi!

Put some rice on a nori sheet evenly.
Leave 1 inch on the top of the sheet.

Spread out carrot hummus just like the photo.

Place cucumber, yellow bell pepper, avocado and tofu.

Dried tomato for red colour.
Then roll up from the bottom to top.

Spread out homemade vegan mayo.

How to Roll Up Sushi: Step 2 (Daikon Radish and Veggies)

Place cucumber, daikon radish, spinach and yellow bell pepper.

How to Roll Up Sushi: Step 3 (Daikon Radish and Veggies)

Sprinkle a little bit of pumpkin seeds on veggies, and hemp seed on rice.

Cut into pieces.
If you don't eat right away, don't cut into pieces to prevent rice from getting hard like raw or half-cooked rice which is not a pleasant texture at all and you don't want to microwave sushi because sushi has to be cold served and sushi rice turns out not tasty. So put it in a fridge as it appears in the photo.

INGREDIENTS (3 Rolls)
[SUSHI RICE]
4-5 bowls of cooked brown rice
1/4 cup rice vinegar
3 tablespoons maple syrup
1 pinch Himalayan pink salt

[TOFU]
1/3 tofu, cut into rectangular
Corn starch or potato starch
Avocado oil
1 tablespoon sake
1 tablespoon mirin
3 tablespoons tamari

[VEGETABLES for TOFU AVOCADO ROLLS]
1/2 cucumber, julienned
1/2 yellow bell pepper, julienned
1/2 avocado, julienned
+Carrot hummus

[VEGETABLES for VEGGIE ROLLS]
1/2 cucumber, julienned
1/2 yellow bell pepper, julienned
1/2 bag or 15g in fry form daikon radish, soaked 15 minutes then cut in short
1 piece spinach
Pumpkin seeds
Hemp seeds
Vegan mayo

INSTRUCTIONS
  1. [SUSHI RICE]
  2. In a small bowl, mix together with vinegar, maple syrup and salt.
  3. Heat up your cooked brown rice if cold.
  4. In a large bowl, combine together cooked brown rice and vinegar mixture.
  5. Set side to cool down.
  6. [TOFU]
  7. Coat tofu with potato starch.
  8. Heat a frying pan and pan fry your tofu in avocado oil until golden brown.
  9. Season evenly tofu with sake, mirin and tamari.
  10. [ROLL UP]
  11. Place a nori sheet on a piece of plastic wrap or sushi mat.
  12. Put some rice, leaving some space on top of the sheet.
  13. Spread carrot hummus or vegan mayo.
  14. Put vegetables on rice.
  15. Roll up from the bottom to top.
  16. Give a little bit pressure half way through to make it tighter, but not too much.
  17. Cut into pieces.
