【Vegan🌱Spicy Miso Ramen】
Craving something spicy and hot?
I know summer is just coming soon! But sometimes we crave something hot to be even hotter during hot summer ? :)
What I'm sharing today is deliciously spicy miso ramen topped with homemade tofu meat. I believe that non vegans will enjoy this ramen as well!

Try it out for your lunch or dinner!
STEP 1
Make kombu stock.
Soak dried shiitake in water.
STEP 2
Make soup.
- Put shiitake water, kombu stock, water, sake, mirin, ginger and garlic into a big pot.
- Bring to a boil.
- Add red miso paste.
- Adjust the taste to your liking.
- Add tahini or other sesame paste in the end. (Don't boil it to prevent from separation)
- Heat over low heat.
STEP 3
Make tofu meat.
- Soak dried tofu into warm water or warm kombu stock.
- dice into small pieces.
- Stir fry.
- Season.
- Simmer.
STEP 4
Stir fry vegetables.
STEP 5
Cook noodles.
STEP 6
Transfer everthing to a ramen bowl.
It's relatively easy to make ramen at home, but yet tastes authentic!!!
No MSG needed for this recipe which is a huge plus!!!

[SOUP]
1 cup shiitake stock
2 cups kombu stock
3 cups water
1 tablespoon sake
3 tablespoons mirin
4 tablespoons red miso paste
2 teaspoons ginger, grated
1 garlic clove, grated
2 tablespoons tahini or other sesame paste
chili oil
chili flakes
[TOFU MEAT]
4 cups dried tofu, soaked, minced
3 garlic cloves, grated
1 tablespoon ginger, grated
1 tablespoon sake
3 tablespoons mirin
4 tablespoons soy sauce
Avocado oil
[VEGETABLES]
1/2 cup bean sprouts
3 Brussels Sprouts, sliced
Himalayan pink salt
Black pepper
Chives, 1 inch long
Cooked ramen noodles
Chili oil for more spicy taste
- [SOUP]
- In a large pot, put water, kombu stock, shiitake water, sake, mirin, ginger, and garlic to bring to a boil over high heat.
- Turn to medium heat, and then add red miso paste.
- Adjust the taste to your liking.
- Turn to low heat, and add tahini.
- Simmer over low heat until topping and noodles are done.
- Do not boil soup after adding tahini to prevent from the separation.
- [TOFU MEAT]
- In a frying pan, heat avocado oil and cook tofu over medium heat.
- Add ginger, garlic, sake, mirin and soy sauce to season.
- Stir fry until water evaporates.
- Transfer to a plate.
- [VEGETABLES]
- In a frying pan, heat avocado oil and stir fry Brussels Sprouts over medium heat.
- Season with Himalayan pink salt and black pepper.
- In a ramen bowl, put noodles, soup, vegetables and chili oil in order.
- Enjoy!
NOTES
◎Keep mind that simmer soup over LOW heat after adding tahini.
