Vegan Herb Potato Salad

Did you run out of vegan mayo? But are you craving something makes you full?

Don't worry, this recipe is perfect for you!

I made up this recipe a while ago, out of nowhere, because I belive anything can be created from simple ingredients without processed foods and also can be moe deliciously nutritious!

 

In this recipe, you won't find vegan mayo at all.

All you need is something little extra to make it better, and a heart ;)

 

How did I make the creamy sauce then, like mayo?

CASHEW!

It's made of cashew, Himalayan pink salt, black pepper, garlic, ginger, lemon and nutritional yeast. 

I, first, soaked overnight some cashew in an adequate amount of water. For more details about the reasons why nuts and seeds should be soaked prior to cooking, please refer back to this page:

 Then I put all the ingredients in a blender and crush the cashew and mix well until it becomes creamy enough, but not too thick. If the consistency was a bit thick side, then pour some water.

 

Actually, this sauce originally came from my homemde cashew dressing, and I thought it might work pretty good as an alternative to vegan mayo, and it really did!!!

So you don't have to run to a grocery store to buy a bottle of mayo anymore once you know how to make this amazing creamy sauce :D

 

 In this recipe, you'll find 2 herbs:

  • Dill
  • Parsley

Dill contains high amount of vitamin A, C, folate, manganese and iron. Dill may help reduce menstrual pain or pains on other parts of the body, promote digestion, and improve the immune system to fight against invaders.
Like dill, parsley may help detoxify bad guys in your body, lower the blood pressure, reduce inflammation and promote digestion as well. 

 

Dill is consideravely easy to go well with any kinds of cuisines from Asian to Western, so you don't have to worry, even though you've never dealt with this herb that has soothing/calming effects :)

For those who has never cooked with dill, hopefully I could make it easier for you to take a first step by making this "Dillicious potato salad"!

Vegan Meal

Herb Potato Salad
INGREDIENTS (3-4 Servings)
6 medium potatoes, skin on
3 tablespoons dill
3 tablespoons parsley
Chili flakes and dried basil for garnishing

[CASHEW SAUCE]
1/2 cup cashew, soaked overnight, drained
1/2 cup water
1 clove garlic, peeled
1 teaspoon ginger, skin on
Himalayan Pink Salt
Black pepper
2 teaspoons nutritional yeast
1/4 lemon, juiced

INSTRUCTIONS
  1. Chop potatoes in your preferable size.
  2. Soak your potatoes in a water filled bowl for 30 minutes, and drain.
  3. Steam potatoes until cooked.
  4. Pre-season with a pinch of salt.
  5. Make cashew sauce.
  6. Add all of the ingredients in a blender, and blend them on the highest level setting until the sauce becomes right texture. 
  7. In a bowl, toss the potatoes, dill and parsley and combine well.
  8. Add in the cashew sauce little by little till your preferable level of taste.
  9. Garnish with some chili flakes and dried basil if you wish.

NOTES
◎You can make it withour nutritional yeast, but highly recommended to add on.
