Vegan Okonomiyaki

Okonomiyaki, one of the most Japanese loving dishes other than omurice and nikujaga which I posted in the past. Okonomiyaki is literally "cooked = Yaki" with "Your Favorite Food = Okonomi", so you can add anything your want to make this veggie pancakes!

This recipe is:

This non-vegan original recipe has fish stock inside as the most important key ingredients, and bonito flakes dancing on the top of the pancakes.

But this is 100% vegan!

How I make it vegan is:

  • Use kombu stock
  • Use lots of vegetables as much as you want
  • Drizzle perfectly homemade vegan mayo

First, you need to mix batter ingredients: whole wheat flour, cornstarch and kombu stock. You don't have to completely mix, which means some flour can be remained as it is.

Then, add your preferable veggies into the batter to mix together.

Pan-frying

Then pan fry both sides until nicely golden brown.
Mmmmm that's the perfect colore that you want!

Put some vegan okonomiyaki sauce (vegan worcestershire sauce + ketchup + soy sauce + maple syrup) and drizzle homemade vegan mayo. For vegan mayo, visit:

Vegan Veggie Pancakes aka Okonomiyaki
INGREDIENTS (4 Servings)
2 1/2 cups whole wheat flour
2 tablespoons corn starch
4 cups kombu stock
5-6 cups vegetables
1-2 pinches Himalayan pink salt
Avocado oil

[OKONOMIYAKI SAUCE]
1/4 cup vegan worcestershire sauce
1 tablespoon ketchup
1 tablespoon soy sauce
1 tablespoon maple syrup

Homemade vegan mayo
Nori flakes if desired

INSTRUCTIONS
  1. In a large bowl, put whole wheat flour, cornstarch and kombu stock, and whisk together.
  2. Add vegetables and combine.
  3. In a frying pan, heat avocado oil and pour batter and pan-fry one at a time.
  4. Flip, and cook the other side until golden brown.
  5. Transfer to a serving plate.
  6. Make vegan okonomiyaki sauce.
  7. In a small pot, mix all the ingredients together, and simmer over medium heat for a minute after bubbling.
  8. Put the sauce over the okonomiyaki, drizzle vegan mayo and sprinkle crushed nori flakes if desired.
