Hi guys!

Today, I would like to share my favorite recipe, which is vegan matcha cheesecake☺

All you need to do is mixing together in a blender! That is it.

Since this recipe contains:

◎No dairy products

◎No eggs

◎No gluten (no refined white flour)

this is perfect for even people who have those allergies☺♡

Most importantly, you can get lots of nutrients from this cheesecake, though it is "sweet snacks"!🤗  

 There are some imperative key points in this recipe that you would better know about☺

 

 

①Nuts and Seeds 

First, the most important ingredient for this recipe is cashew nuts.
Without cashew nuts, the cheesecake will not taste like regular cheesecake or provide the creaminess at all.
Please, please soak your cashew in a sufficient amount of water overnight before you use! 

Here is the reasons why you should do so:

  • Gives the creaminess/smoothness
  • Helps digestion
  • Improves nutrient absorption⇒it is because anti-nutrients, such as phytic acid, lectin and enzyme inhibitors, are released into the water
  • Increase vitamine and mineral absorption
  • Alkalizing⇒⚠Acidity is toxic to our body!

As far as I know, these are the reasons that some people have stomachaches after consuming raw peanuts or other nuts.
In fact, I was not aboe to eat any kinds of beans until I went vegan💦 The texture is the one reason, but I always had a stomachache right after eating them. It was a very disturbing feeling :/

 

But, the problem solved when I started soaking them enough in advance 🙌🙌🙌 No bloating, no gas, no stomachache and no uncomfortability in my stomach! Yay!

 

Whether it works for you or not, it all depends on individuals. But it is definitely worth trying it out!

 

②Dates

Use other dried fruits without sugar coatings if you can not find any dates in where you live. The method is the same: soak them overnight before use and add in the other crust ingredients☺

 

③Matcha Green Tea Powder🍵

Because every brand or matcha itself has a different flavor and taste, adjust the amount of the powder you would add into both your crust and filling after tasting a little bit.

Here is my matcha powder that I use on a daily basis, and of course in this cheesecake recipe. You might be able to buy one at Costco if you reside in Canada☺

What I like about this matcha is that it contains pure 100% matcha, that it tastes bitter like a real Japanese matcha, that it is ORGANIC🌱 , and that it can be perfectly used to make some green smoothies, authentic matcha tea and matcha latte!🍵

 

Raw Matcha Cheesecake
INGREDIENTS (3-4 Servings)
[CRUST]
1/2 cup ground flax seeds
1 cup coconut flakes
1/2 cup oats
2 teaspoons Matcha Powder (no sugar)
5-7 pitted dates, soaked overnight
1/2 amount of dates water
1/2 teaspoon Himalayan Pink Salt

[FILLING] 
1 cup cashew nuts, soaked in water overnight
1/4 cup maple syrup
1/2 amount of dates water
1 1/2 fresh lemon, juice
2 tablespoons Matcha Powder(no sugar)
1/2 teaspoon Himalayan Pink Salt

INSTRUCTIONS
  1. [CRUST]
  2. Make the soaked dates tiny chuncks in a blender.
  3. Grind oats roughly in a blender.
  4. Put dates, oats and all other ingredients in a blender and mix until it becomes sticky dough.
  5. Place it in a mold whatever you like to use. Push it down with your fingers to make it flat.
  6. Cool in freezer until firm enough.
  7. [FILLING]
  8. Mix everything together in a blender until smooth.
  9. Pour over the hardened crust, evenly.
  10. Put it back to the freezer until set.
  11. Take the cheesecake out of the freezer approximately 30 minutes before you eat.

NOTES
◎If the crust seems wet, then add in little bit more oats or flax seeds.
◎Garnish with your favorites toppings, such as nuts and whipped coconut cream when the cheesecake is ready.
