Vegan Vanilla Granola

The last time I shared my granola recipe, it was oven-bake, but this time, I'm sharing the easy version of the same granola with use of a frying pan so that you don't have to worry about your granola being burnt out in the oven from the edge to edge. 

This recipe is:

  • Vegan
  • White sugar free
  • Gluten free

And highly nutritious since it contains fiber, vitamins and minerals from oats, nuts and buckwheat groats. Buckwheat groats give it nice crunchy texture when you chew it.

Perefect for quick breakfast and healthy choice of snacks🍀

This is the buckwheat groats before soacking in water overnight.
Please soak some of them in water overnight before you make granola.
It becomes quite slimy and you want to get rid of sliminess by rinsing off.
Then, roast in your frying pan without oil.
!!!CAUSTION!!!

  • Never use a spatural to cook raw buckwheat!

At first, you find it a bit sticky, but Do NOT use spatula because it breaks the groats out if you use it.
It eventually starts drying out and is naturally taken off from the frying pan after cooking enough. The key point is to shake the frying pan so groats don't stay at the same spot and prevents from burning out.

Transfer to a plate when the groats become nicely golden brown. (Kasha)

Do the same to oats.

Roast until golden brown.

Add in Kasha to combine together.

In a small pot, heat nut butter, maple syrup, pure vanilla extract and salt and mix.

※In case you are allergic to nuts, just remove nut butter and add more maple syrup instead.

Vegan Chocolate Granola

You can totally add some cacao powder to make it chocolate flavored granola which is my favorite🍫

How to eat:

  • Pour in vegan yogurt
  • Chia pudding toppings
  • Pour in plant-based milk

You can eat as it is for sure!

Vegan🌱Homemade Healthy Granola
INGREDIENTS (1L jar)
6 cups oats
2 cups buckwheat groats
4 tablespoons coconut oil
2 tablespoons maple syrup
2 tablespoons peanut butter (sugarless)
1 pinch of Himalayan pink salt
2 teaspoons pure vanilla extract

INSTRUCUTIONS
  1. In a bowl, put buckwheat groats and water and soak overnight.
  2. Strain buckwheat groats, and rinse well to remove sliminess.
  3. Roast buckwheat groats in a frying pan until golden brown and crunchy.
  4. Transfer to a plate. (kasha)
  5. Roast oats until golden brown.
  6. Add kasha into the roasting oats and mix well.
  7. In a small pot, cook nut butter, coocnut oil, maple syrup, salt and vanilla extract together until thickened.
  8. Add the sugar mixture into the oat and kasha mixture.
  9. Cook over medium heat until the sugar mixture spreads evenly over the oat and kasha mixture.
  10. Remove from heat and cool it down.
  11. Transfer to a jar.

NOTES
◎Use non-stick frying pan.
◎Do not use a spatula when roasting buckwehat groats.
