This soy meat texture is quite similar to meat that you may want to add to your meat substitutes.

What you need is for meat substitution:

  • Dried tofu called Kouya Tofu

and some condiments like mirin or maple syrup, and tamari for gluten free option🌱

Ingredients are:

  • ginger
  • garlic
  • acovado oil
  • dried tofu
  • mirin
  • sake or white wine
  • tamari or soy sacue

First, cook ginger and garlic until fragrant.
Then, add dried tofu which was soaked in salted water or kombu dashi stock in advance and cut into pieces like the photo above.

Keep cooking unitl tofu gets dried out and colored in light brown.

Season with sake, mirin and tamari.

Transfer into a clean sanitized glass jar after cooling down.
You can use this soy meat as meat substitute for any kinds of dishes you like!

Vegan🌱Homemade Soy Meat
INGREDIENTS (300ml jar)
1 tablespoon ginger, minced
3 garlic cloves, minced
Avocado oil
5 sheets dried tofu
1 tablespoon sake or white wine
3 tablespoons mirin or maple syrup
4 tablespoons tamari or soy sauce

INSTRUCTIONS
  1. In a bowl, pour salted water (1 pinch of salt + warm water) or warm kombu stock.
  2. Toss dried tofu into the warm liquid to soften for about 10-15 minutes.
  3. Squeeze the soaked tofu to dry, and cut into tiny pieces.
  4. Heat avocado oil in a frying pan, and add ginger and garlic to cook over medium heat until fragrant.
  5. Add tofu and stir fry.
  6. Keep cooking for approximately 10-15 minutes over medium to high heat until tofu is dried out and turns light brown on surface.
  7. Add sake, mirin and tamari to season.
  8. Adjust the taste to your liking.
  9. Remove from heat and let it cool.
  10. Transfer into a glass jar.
