【Vegan🌱Chocolate Banana Mini Muffins🍫】
I've been making this muffin for a long time, without any animal products or animal-deprived items! It"s completely 100% vegan friendly as well as gluten free! Can you imagine how heavenly my whole house starts to smell? That makes me absolutely happy! Baking is now a thing for some of you to do during quarantining due to covid-19 because it has a possitive effect in your mood. So why don't you bake this little cutie :) This will make you happy and calm as much as it does for me.
I'm very grateful that how amazing the combination of banana and chocolate is! These 2 items will work best together. Regarding their nutrient compositions, it's also fantastic that banana is rich in fiber, potassium and manganese, while cacao contains high amount of magnesium, fiber, antioxidants and calcium. Thus, from what I see/think, since they have different nutritents from each other which are relatively higher, it becomes well balanced in nutritional value when they're put into one product together. For vegan cholate chips, here is what I always buy. I love this brand because it is non-GMO, certified vegan and certified gluten free! So highly recommended!

I guess it'syour turn to bake this little muffins!
2 tablespoons coconut oil
1 tablespoon maple syrup
2 ripe bananas
1 cup oat flour
1/4 cup cacao powder
2 teaspoons baking powder
1/4 cup cashew milk
Vegan dark chocolate chips
Almonds, crushed
Pumpkin seeds, crushed
- Preheat oven to 355°.
- Put coconut oil, maple syrup and bananas into a large bowl. Combine together with a whisk until creamy.
- Add in oat flour, cacao powder and baking powder and mix well with a spatula.
- Pour cashew milk little by little into the bowl.
- Combine until flour dissolves.
- Add in vegan chocolate chips.
- Put some coconut oil on your muffin baking pan, spoon the muffin mixture into the pan equally.
- Top with crushed almonds and pumpkin seeds if you like.
- Bake in the preheated oven for 25-30 minutes.
- Check inside by stubbing a toothpick in the center of the muffins.
- If nothing stuck, then take them out of oven.
- Let it cool.
- Enjoy your tea time!
NOTES
◎Don't have to melt coconut oil.
◎Frozen banana can be used as well. But in this case, defrost first.
