Nutrient-dense Energy Balls by piggyinkitchen

Are you having a hard time deciding snack ideas? :)
Do you want to have a healthy choice as well?
This recipe might help you out!

This energy ball recipe is quite easy to make and very nutritious that you want to add into yuor diet as one of the most healthiest snacks on a daily basis!

This recipe is:

  • Vegan
  • Gluten free
  • Sugar free
  • Nutrient-dense

It's perfect for anyone who are feeling tired and wants to boost their energy, or also great for quick breakfast as it's packed with nutrients!

Even though there's NO SUGAR added in it, it is sweet enough to enjoy as healthy snack. What I use for this recipe instead of sugar is dried pitted dates! I love dates! Dates are an awesome fruit for binding foods together as well as giving it a sweet taste as a natural sweetner!

There're 2 important steps that you don't want to skip.

Key Points

  1. Soak your dates in a little amount of water.
  2. Process each ingredient in a blender individually

The reason why you only need a little water for soaking your dates is because you don't need too much water to blend everyhting together to make energy balls and you do want to keep dates' flavor and nutrients in them, not running off to the excess water which you're not going to add in the energy ball mixture.

Regarding the process of ingredients in a blender separately, it's to give it a right texture in the balls. Since pumpking seeds are hard to crush into pieces, they remain in the form of chuncks when processing together with other ingredients without preparation. It's the same with oats and dates. So you'd better do it individually :)

Alright, that's all about it!

Now it's time for the recipe card :)
Enjoy your healthy snack!
