This doughnut cookie recipe is super easy to bake!
When I was craving for doughnuts so much, I created this recipe for my healthy snack with my staple foods such as buckwheat flour, coconut oil, cacao powder and so on!
Although I used buckwheat flour, you can use any flour you have at home, from all-purpose flour, chickpea flour, oat flour to coconut flour.

If you're allergic to gluten, use 100% buckwheat flour or other alternatives for your safety.

All you need to do is to gather up everything you need to bake and mix them up!
That's all about it :)

To give it natural sweetness, use maple syrup, soaked dates or other natural sugar that you love. Don't have to use refined sugar like white sugar, ever!
Speaking of sugar, brown sugar may sound healthier than white sugar, but from what I learned, brown sugar is just the same as white sugar, or in my opinion, it's slightly worse due to addition of caramel colors which have potentially cancer risks.

So use natural sweetners, instead :)
That's the healthiest way I believe.

Vegan🌱Easy and Quick! Baked Doughnut Cookies
INGREDIENTS(6 Servings)
1 tablespoon coconut oil
5 dates, soaked overnight
1 cup buckwheat flour
1/2 cup almond milk

[TOPPINGS]
1/2 cup homemade vegan chocolate
5 almonds, crushed or sliced
10 hazelnuts, crushed or sliced
Coconut flakes

INSTRUCTIONS
  1. Preheat oven to 355°.
  2. In a blender, put soaked dates and process until small chunks. But not completely making paste form.
  3. Set aside the dates and date soaking water.
  4. In a large bowl, put coconut oil, dates and date soaking water, and combine together.
  5. Add in buckwheat flour, and mix well.
  6. Pour almond milk into the mixture, and mix again.
  7. If too watery, add more flour.
  8. Bake in the preheated oven for about 20-30 minutes.
  9. Cool it down when baked.
  10. Dip the doughnut cookies into the vegan chocolate sauce and put it back to the baking pan or a cooling plate.
  11. Top with almonds, hazelnuts and coconut flakes.
  12. Enjoy!

NOTES
◎If you want it to be a bit fluffy, add 1 teaspoon of baking powder.
