Veggie and Chickpea Tart

I'm so excited to share this amazingly delicious and nutritious tart with you all!
I came up this idea using Veggie and Chickpea Hamburger leftover that I posted a couple of days ago. It turned out beautifully flavorful!

This recipe is:

  • Easy
  • Time-saving
  • Delicious
  • Nutritious

So it's suitable for people who have a tight schedule! The point is that you don't need to place your tart dough in fridge for 20 minutes or so! It wil make a huge difference in terms of your precious time if you can do something else with that 20 minutes ;)

In addition to the ingredients that I used in the chickpea hamburger mixture, I put some minced broccoli, dill and vegan cheese in it. It was a perfect idea to do, especially vegan cheese that melt in the mixture after baked!

Speaking of vegan cheese, I used 2 types of cheese:

  • Vrie by Black Sheep Vegan Cheeze
  • Mozzarella cheese by Daiya foods

They are Canadian companies!
Black Sheep Vegan Cheeze are located in Okanagan, BC and has a great selection of vegan cheeze. They make vegan cheese from natural and organic ingredients with no preservatives, non-GMO. This is why I love their cheese!

The other one is Mozzarella cheese from Daiya foods which is one of the biggest Canadian company located in Vancouver. This cheese tends to not melt even when heated, but it still works as a topping for pie, tarts, lasagna....things like baking foods!

I put a little bit more mixture in the middle to make it higher, like a mountain :)

Then spread out some cheese and put 2 tart leaves which I made by my hands and a knife (because I don't have any cookie molds...)

Alright, it's time for the recipe card I guess ;)

 

Vegan Veggie and Chickpea Tart
INGREDIENTS(4 Servings)
2 tablespoons coconut oil
2 teaspoons maple syrup
1 flax egg
(1 tbsp ground flax seed+2 tbsp water)
1 cup whole wheat flour
Veggie and Chickpea Hamburger Mixture
Dill
2 broccoli heads
Vegan Cheeses
INSTRUCTIONS
  1. Combine the mixture with dill, broccoli and vegan cheese in a bowl.
  2. In other bowl, put coocnut oil, maple syrup and flax egg, then mix well.
  3. Add in whole wheat flour and mix.
  4. Place dough on a board, then kneed with your palm.
  5. First the dough look drym but keep kneeding. It will be moisturized eventually.
  6. Roll out to make a circle shape with a rolling stick.
  7. Cover your tart mold which you lightly spread extra coconut oil, with the dough.
  8. Roll out again on top of the mold.
  9. Remove excess dough. Make 2 leaves for decoration.
  10. Bake for 30 minutes in 390° preheated oven.
  11. Put the chickpea mixture on the nicely baked tart, then put leaves on top.
  12. Bake for another 30 minutes until it sets.
  13. Let it cool.
  14. Serve and enjoy it!

NOTES
Do blind baking to prevent from your crust becoming soggy or remaining raw on the bottom when served.
