You don't have fresh basil?
Don't worry! You can make pesto with spinach and dried basil!
This is what I've been making for a long time when out of basil season. It's a great alternative to immitate basil pesto that I've been loving.

This incredible recipe is super easy and quick so even when you don't have much time to cook, this could help you.
For parmesan cheese, I use my homemade vegan parmesan cheese so it gives cheesy flavor and makes it even more delicious! So definitely you should add in!


After blending spinach, dried basil and a little bit of cashew milk in a high speed blender, cook with diced onions and mushrooms in heated olive oil until water evaporates in half.
Then add in vegan parmesan cheese.


Mix with cooked spaghetti.

If you have fresh basil, you can totally use it all or half spinach half basil as you like! That is also delicious! It's just that this recipe is mainly for those of you hardly can obtain fresh basil due to inaccessibility.

Vegan Spinach Pesto Pasta
INGREDIENTS (3 Servings)
2 cups spinach
2 cups cashew milk
5 cloves garlic, minced
1/2 onion, diced
2 mushrooms, sliced
Himalayan pink salt
Black pepper
3 tablespoons dried basil
2 tablespoons vegan parmesan cheese
Extra virgin oil
Cooked pasta

INSTRUCTIONS
  1. Put spinach and cashew milk in a blender, and process until smooth.
  2. Heat olive oil in a frying pan, add garlic to cook until fragrance.
  3. Add diced onion and stir fry until it becomes translucent.
  4. Add mushrooms and season with salt and pepper.
  5. When mushrooms are cooked, pour prepared spinach mixture into the pan.
  6. If watery, simmer until paste-like form.
  7. Add dried basil and parmesan cheese after the spinach mixture thickened enough.
  8. Toss cooked spaghetti and combine throughly and drizzle some olive oil over the pasta.
  9. Transfer pasta onto a plate and sprinkle some chili flakes if desired.
  10. Enjoy!
