I'm sharing my homemade vegan mayo that I've been posting many times on some recipe articles. I'm literally obsessed with mayo!
To make it easier for you to find this vegan mayo recipe, I thought it would be a great idea to post one article for only vegan mayo, so you all can visit back and forth as reference :)

Once you know how to make it, you will not need to rely on store-bought vegan mayo anymore!!!! ( I've never bought vegan mayo actually for myself, though I've tried some at work and when I went out. The reasons are: it's relatively expensive, most of them contain unnecessary food additives and different kinds of vegetables oil, even unhealthy ones. So I don't think is the healthiest way.)

Have you ever heard of fermented rice milk before?
If it's something new to you, you are so lucky!
Fermented rice milk aka Amazake is a traditional Japanese rice milk that has a long history in it. "Ama" means sweet and "zake" means alcohol. Although it's called sake, it's actually not. The reason why we call it sake is because it can taste a bit sour after fermenting rice milk, just like other fermented foods such as sauerkraut and kombucha.
Back in Japan, every new year's eve, I went to a shrine with my family to thank our god for the year to be wonderful, challenging and lovely. After that, we always got a cup of amazake from the organizers. It was so tasty and heartwarming! Amazake does remind me of that sweet and warm moment that I spent with my family.

What's Amazake made of?
Amazake is fermented by koji bacteria from koji rice.
All you need is:

  • Koji rice
  • Cooked brown rice
  • Water

How would you cope with the summer hotness?

The recipe that I'm sharing today is that not only does it cool you down, but also it does make you more energized during the hot days.

Vegetables + Udon noodles = Delish Udon Salad!

I love this a lot! Especially during summer! Summer is not my thing to be honest, I can hardly deal with hotness always. This is something that I want to eat to cool myself down and get more comfortable, though it's too hot outside!
It contains 6 kinds of vegetables, crispy tofu, orange, mushroom, pumpkin seeds, sunflower seeds and hemp seeds that make it nutrient-dense and helps you to prevent/recover from summer heat/fatigue✨

I've been making this tomato sauce for a long time, but I added some soybean meat this time to make bolognese pasta🍝
This recipe is:

  • Vegan
  • Gluten Free
  • Sugar Free

If you're allergic or sensitive to gluten, use gluten free pasta noodles such as rice noodles, 100% buckwheat noodles, glass noodles and quinoa noodles.
Ingredients are really simple that you can make it with something you have in your fridge. Any dried herbs like oregano and store-bought vegetables stock are NOT needed!
So some of you could start cooking from even now for dinner!
