This recipe is simple, but delicious super easy to make and flavorful with olive oil, red chili pepper and garlic. If you love making pasta, this is what you want to master eventually because this simple pasta can hide nothing behind in taste! This pasta is only composed of cooked spaghetti, garlic, red chili pepper, salt, black pepper, Italian parsley and red chili infused oil. 

Sounds intimidating? Don't worry, I will include as much details as possible to make your spaghetti fragrant in the recipe card.

Whenever I make spaghetti aglio olio e peperoncino, it always reminds me of my mom who used to cook this for me, pulling me back to my childhood tiime and feels very nostalgic. I can even picture myself and her sitting in a living room to eat the spaghetti together. Since several years now, I'm no longer living with her, but I always miss her a lot. Especially in this toughest time during covid-19, I feel like I want to be with her and have healthy meals together like we used to for a long time.
Anyways, this spaghtti is something I love and have connection with my family, just like everyone else has the same story :)

There are some important things for you to make perfect spaghetti aglio olio e peperoncino:

  1. Let garlic and red cilli pepper soak and lightly fry in generously oiled frying pan.
  2. Don't burn garlic.
  3. Season enough with salt

First, you put garlic and red chili pepper in a frying pan until nicely fragrant. At this point, please don't let it burn. If your garlic and chili pepper are turning to brownish, put the pan away from heat, then put it back again. Burning them make your pasta unpleasant taste.
Salt, salt, salt! Salt is one of the most important ingredients to make delicious pasta! Salt enhances a lot more flavor than when insufficient. So don't be shy! :)

Spaghetti Aglio Olio e Peperoncino
INGREDIENTS (3Servings)
4 cloves garlic, sliced
1 red chili pepper, chopped
Olive oil
2-3 teaspoons Himalayan pink salt
Black pepper
Fresh parsley, chopped
Cooked pasta noodles
Red chili oil

INSTRUCTIONS
  1. Heat olive oil over medium heat, add in garlic and red chili pepper.
  2. When fragrant, add in cooked pasta and stir well.
  3. Sprinkle with Himalayan pink salt and black pepper to season.
  4. If pasta seems dry, add more olive oil.
  5. Turn off the heat.
  6. Toss fresh parsley and combine well.
  7. Plate pasta, then drizzle some red chili oil evenly over pasta.
  8. Enjoy!

NOTES
◎Don't burn garlic and red chili pepper.
