I'm piggyinkitchen.

Firstly let me say thank you for having interests in my personal blog!

For you to have the best experiences on my blog, I want to introduce myself and what you're to expect to see here.

Let me first explain how it all started...
After watching so many videos and real photos of animal cruelty, I decided to go vegan.

My Dietary History

  1. to help environment
  2. to protect animals from unnecessary horrible holocaust that has been happening as a standard practice at animal factory farmings all over the world. I do think that it is not right because animals are all sentient-beings just like us. They feel pain, fear, sadness, fun and more.

Personal History
Back in Japan, I used to work at a Special Care Nursing Home for about 2 years. It was such an amazing experience for me to not only improve my cooking techniques, but also how to deal with special diets!!! This has expanded my repertoire and skills, definitely.

It was about 2 years after I graduated from a nutrition university and passed the national exam to be R.D in Japan, that I moved to Vancouver, Canada. Then, I became a Certified Nutritional Practitioner here in Canada.

In Canada, I have met lots of amazing vegan friends and Canadians who are enthusiastic to improving their health, and that made me think more deeply of being healthy in more natural ways and want to tell people who are struggling with their health issues. That was one of the reasons that I decided to enroll a nutrition school to relearn the connection between food and the body, but my focus, this time, was on healing with "natural methods". Then, finallly, finally! I finished all the required courses to graduate last November!!! Woohooooo

The top 2 reasons why I've followed the path in the nutrition field are:

  1. that my family member has been suffering from diseases that could be eased by healthy lifestyle
  2. that simply I LOVE to cook (I've been cooking since I was 7.)

I wanted to combine these things into one field which is "Dietitian preparing halthy meals". These circumstances and the motivation absolutely led me first to be a dietitan. and then CNP to support people who have health difficulties with use of natural medicines. such as herbs and foods (Food is Medicine by Hippocrates).

Also, in 2018, a couple of years ago, I started new project: Recipe Development for vegans.
I have been developing vegan nutrient-dense recipes on my own by trying new food and methods out at home☺ What made me want to do this was just because I didn't know the real vegan dishes made of whole foods and how tasty they actually can be with a proper cooking, until I learned vegan cooking in Holistic Food Preparation class, one of the required courses at Holistic Nutrition school in Canada. This did inspire me a lot, though I was non-vegan at that point.

Since then, my focus has been "natural ways of healing health issues!

  4. Organic
  5. Non-GMO
  6. Herbal medicine
  7. Do not depend on conventional medicines
  8. Non refined food
  9. No food additives. artificial ingredietns and harmful chemicals

All my recipes on my blog are nutrient-dense and vegan :) Some of them can be alternative to gluten free as well!! I also try to make my recipes easy to follow for all levels of cooking from beginners or kids to advanced so that everyone can enjoy my favorite dishes!

After many years of learning health and nutrition both in Japan and Canada, I decided to share my experiences and knowledge as well as vegan recipes with you around the world through my blog.

So I hope you take away even small new things from here :)

 

For your information, recently, even in Japan, the first ever vegan store has opened since last winter in Asakusa, Tokyo 〔VEGAN STORE〕. It is true that the number of Japanese people who made a transition to vegan has been increasing in Japan, but I would be grateful if I could contribute to make more awareness of vegan and how delicious vegan dishes can be!!!

 

You feel dreading because you think it might be difficult or you need some techniques?Don't worry :) It is much easier than you would expect!!!
