Strawberry Crisps

Strawberry Crisps by piggyinkitchen

This is one of my favorite sweet recipes that are nutrient dense, and I've been making this crisps for a long time now☺ This crisps is perfect for breakfast and snack to boost your energy and make you full!

Instructions are pretty simple and easy as always and I wanted to share with you guys!

My strawberry crisp recipe was actually inspired by my Canadian friend when we were living together with other roomies in our hostfamily's place back in the US. She made apple crisps for us, which was amazingly delicious🍎

6 years later, the sweet and fun moment with her just came back to my mind out of nowhere, for some reason, which was a huge pleasure for sure!

At the time, I didn't have any apples, but I had some strawberry jam that I cooked. So I decided to use some of them to put inbetween the oats dough. And of course, this is 100% vegan 🌱 that I substituted butter with coconut oil🙆‍♀️

If you're allergic to gluten, use certified gluten free oats just in case.

Grind in a blender when using oats chunks, not the flour form which I always do :)

For coconut flour and coconut oil, I always buy nutiva products because it's organic, vegan, gluten free, and non GMO!

Strawberry Crisps
INGREDIENTS (3-4 Servings)
1 cup oat flour
1/4 cup coconut flour
1 tablespoon flax seed, ground
1 tablespoon coconut oil, melted
1 tablespoon maple syrup
1 teaspoon cinnamon powder
1 pinch of Himalayan Pink Salt
Strawverry Jam

INSTRUCTIONS
  1. Preheat your oven at 370°
  2. In a bowl, put all of the ingredients except strawberry jam and combine together well. If too dry, then add in some more melted coconut oil.
  3. In a baking container, put half portion of dough on the bottom, then pour some strawberry jam on top of the dough and finally the rest of dough on top. Push down the dough to make it flat.
  4. Bake in the oven for 20-30minutes until cooked.
  5. Prevent the dough from burning by covering a foil over the container if necessary.
  6. Take the cooked crisps out of the oven, then let it cool.
  7. Cut in your preferable size and shape.
  8. Enjoy!

NOTES
◎I used a rectangular baking pan this time, just for your information :)
