Vegan🌱Loaded Veggie Salsa🍅】

Since last December, there has been a new pandemic: covid-19 all over the world, and the Japanese government finally declared the state of emergency a few days ago😓

Here in Canada, the state of emergency was declared about 3 weeks ago, and it is obligatory for us to do social-distancing: stay 2m/6ft away from others. I've been quarantining since then💦

Easily getting cold?

 

Do you eat enough vegetables everyday?☺

For some of you who have not eaten veggies too much lately, here is what you need to read :)

 The vegan dish that I am sharing with you is literally loaded with vegetables♪

There is a classification for vegetables:

○Light-Colored Vegetables

Lettuce, cabbage, eggplant, cucumber, corn, onion etc...

○Geen and Yellow Vegetables

Brussels Sprouts, kale, spinach, tomatoes, bell peppers, mustard spinach, carrots etc...

 

Although each vegetable contain some nutrients, especially the nutrient score of green and yellow vegetables is higher than light-colored vegetables and there are so many health benefits from consuming those vegetables☺

Due to this, I highly recommend you eating more than half portion of total vegetable intake in a day from Green and Yellow Vegetables😋

 

You probably want to eat this salsa that has lots of Green and Yellow Vegetables as one of your side dishes☺

 

Loaded Veggie Salsa
INGREDIENTS (1L Jar)
4 tomatoes
1 yellow bell pepper
1 red bell pepper
1-1/2 purple onions
2 fresh lemons, juice
1 teaspoon Himalayan Pink Salt
Cilantro

INSTRUCTIONS
  1. Cut vegetables in cube.
  2. Mice cilantro.
  3. Combine all ingredients in a bowl.

NOTES
◎You can also make this salsa with any other vegetables that you like to add in!

Ex) asparagus, radish
