Vegan Egg Free Omurice

This is another Japanese loving dish in all ages from kids to adults! It's called Omurice which is literally "omelette on rice". Omurice is one of my mom's homecooking dishes and I loved it so much! It pulles me back to my childhood that I spent with my family back in my hometown, wherever I am☺

As you know, this style of omelette is made of eggs and pretty similar to western omlette.

but this recipe is:

  • Vegan🌱
  • Gluten free
  • Nut free
  • No MSG
  • No Ketchup

YES!
It is vegan friendly!
Also I made tomato sauce from scratch with sun-dried tomatoes!

Instead of using eggs, I added tofu, turmeric and kala namak for the omelette to look/smell like eggs. These 3 ingredients are a staple for my egg dishes!

Since this omurice is constructed in 3 parts:

  1. Fried rice
  2. Vegan omlette
  3. Homemade Tomato sauce

I made recipe cards individually for these 3 so it won't confuse you :)

Smash your tofu enough, just like the picture :) Then add seasonings and cornstarch.
I added some chickpea flour in it to make it a bit batter-like.

When the consistancy becomes like this (thinned), now it's time to cook :)

Here is the recipe cards for 3 components in separated sheets!

Egg Free Tofu Omurice [RICE]
INGREDIENTS (3 Servings)
2 cloves garlic, minced
1/2 onion, diced
1 bunch kale, chopped
2 cups spinach, chopped
Himalayan pink salt
Black pepper
1/4 cup parsley, chopped
3 cups cooked brown rice
Avocado oil

INSTRUCTIONS
  1. In a frying pan, heat avocado oil over the medium heat  and add in garlic to cook until aroma comes out.
  2. Add in onion and stir fry until it becomes translucent.
  3. Put kale into the pan and stir fry.
  4. Add in steamed brown rice, salt and pepper and stir fry well for about 5 minutes.
  5. Turn off the heat, then add in parsley and mix well.
  6. Place on a plate like a little mountain.

NOTES

Egg Free Tofu Omurice [OMLETTE]
INGREDIENTS (3 Servings)
1/2 or 180g tofu
1/2 cup chickpea flour
3 tablespoons cornstarch
2 teaspoons turmeric
Black pepper
1 cup water
1-2 pinches kala namak
Avocado oil

INSTRUCTIONS
  1. In a bowl, put tofu and smash into pieces.
  2. Then add in chickpea flour, cornstarch, turmeric, balck pepper and water. Mix well.
  3. Heat a frying pan with 2 tablespoons avocado oil.
  4. Pour the tofu batter into the pan.
  5. Sprinkle evenly 1 pinch kala namak over the batter.
  6. Cook until harden.
  7. Flip it.
  8. Sprinkle evenly another 1 pinch kala namak over the cooked side.
  9. Cook the other side.
  10. Cover the omelette over the fried rice.

NOTES
◎As chickpea flour absorbs oil very quickly, put enough avocado oil for the batter to not stick on the pan.
◎When flipping omelette, it is quite delicate and fragile, so pease be careful not to break apart! → Flip when it's well cooked, but burnt.

Egg Free Tofu Omurice [TOMATO SAUCE]
INGREDIENTS (3 Servings)
10 sun-dried tomatoes
1/4 cup water
2 teaspoons maple syrup
1/2 tablespoon dried basil
2 teaspoons dried oregano
1/3 clove garlic
1/2 teaspoon Himalayan pink salt
1 pinch black pepper

INSTRUCTIONS
  1. Put everyting into a blender or food processer.
  2. Process until paste that tomatoes are still in a form of tiny chunks.
