Vegan Homemade Almond Milk

This recipe is super easy and way more delicious than store-bought plant-based milk! You don't have to buy a carton of nut milk anymore unless your intention is to get some nutrients that we can't obtain from vegan diet, such as vitamin B12 which is fortified to plant-based milk sold in grocery stores. 

Once you know how to make basic plant-based milk, you can absolutely customize it to new taste, like chocolate and vanilla flavors. Also you can use it for making your own smoothies and baking vegan cakes/cupcakes/muffins, add into your oat pudding, and more!

RATIO: NUT TO WATER
For achieving LIGHTER taste, 1:5, whereas if you want it to be a bit THICKER and RICH in taste, 1:4 which is my favorite ratio.
So please adjust the amount of water to your liking!

SOAK YOUR NUTS OVERNIGHT!
Soaking nuts makes the nut milk more creamy and smooth which lets you experience a better texture when you drink it.

This is for filtering nut milk to separate from nut strained pulp. Some people like it in theri nut milk though. It's totally up to you whether or not you keep it in your nut milk :) But if you don't like it, don't skip this step :)

Vegan Nut PulpsBy the wat, don't dump the nut pulps! You can use it in cooking and/or baking. You can add into your bread, cookie, muffin doughs and put some into your smoothie. If you don't use it right away, freeze it to prevent from being spoiled.

HOW LONG DOES IT LAST?
Well, it really depends on freshness of nuts itself and how you sterilize your bottles. but in my case, my nut milk usually lasts up to 2 weeks. There's one time that my almond milk has got spoiled in several days after I made. It was, I believe, because my almond was a bit old. It looked slimy a bit, but didn't smell sour or unpleasant. So I used it for cooking anyways though because I really didn't want to waste my almond milk. Also my grandma used to tell me "if your food smell/taste bad, then it's not good to eat. Otherwise cook it with high heat. Use your senses and instinct".

Vegan Homemade Plant-Based Milk
INGREDIENTS (500ml)
1/2 cup nuts you like
2 cups water

INSTRUCTIONS
  1. Soak nuts overnight.
  2. Put the soaked nuts and water in a blender, then process until nuts're finely crushed.
  3. Put a strainer on a smaller bowl. and put a piece of cheese cloth on top.
  4. Pour carefully some nut milk into the cloth bowl.
  5. Hold the cloth tightly from the corner to corner, and strain nut milk by pressing hard. (see photo)
  6. Keep doing until nut milk is all strained.
  7. Transfer the nut milk into a well-sterilized bottle.
  8. Keep it in fridge.

NOTES
◎Soak your nuts overnight to make nut milk creamy and smooth in texture.
