Chocolate Buckwheat Pancakes by piggyinkitchen

I've been making this pancake for breakfast for a long time to make mornings more delightful than when having just a toast.

This is 100% vegan.

It can be gluten free as well if you choose a certified gluten free buckwheat flour or you can alternative to your favorite flour, like almond and coocnut flour. In that case, the amount of flour could slightly differ from my recipe.

To make beautiful pancakes, all you need is just to mix well and pan fry! That's it! You do NOT need any special skills in cooking at all.

This is perfect for biginners and even kids!

So enjoy your precious breakfast time with your little human-beings, anyone you love or by yourself eating it all up like I used to do before my boyfriend and I started living together ;)

I would recommend you using your homemade almond milk, but it's totally okay to use a store-bought plant-based milk.

But my suggestion still remains homemade one because of taste and flavor issues.

Chocolate Buckwheat Pancakes
INGREDIENTS (8-10 Pancakes)
2 cups buckwheat flour
2 teaspoons baking powder
1/2 cup cacao powder
1 pinch Himalayan Pink Salt
1 tablespoon maple syrup
1 cup almond milk
Coconut oil
Fruits, whipped coconut cream for toppings

INSTRUCTIONS
  1. In a large bowl, toss dry ingredients and mix well.
  2. Add in maple syrup.
  3. Pour almond milk little by little until it becomes right consistancy.
  4. Oil a frying pan, and cook your batter over the medium heat, one at a time.
  5. No need to cover aith a lid.
  6. Don't speard the batter using a spoon because it will evenly spread itself to be a nice circle.
  7. Wait until it starts bubbling.
  8. Flip it when the bottom is cooked and cook the other side as well.
  9. Put some fruits, whipped coconut cream and maple syrup if you like.
  10. Enjoy!

NOTES
◎To prevent from burning, place the flying pan on a wet cloth for 3-5 seconds before the next round.
