Vegan Eggy Tofu Scramble

This is one of the most amazing recipes that I've created so far! It looks like scrambled eggs, doesn't it?! It's actually made of tofu.

This recipe is:

  • Vegan
  • Animal cruelty free
  • Gluten free
  • Protein packed

Tofu is an amazing food that is high in protein, calcium and iron. It's great for those who are having anemia, weakened muscles and bones. :)

In Japan, where I was born, tofu is one of the most popular items as it's respectively cheep and healthy, and we've been eating soy bean products quite often since many years ago, like miso, fermented soy bean paste, soy sauce, also fermented condiment, and yuba, bean curd skin. Although I used to eat tofu frequently back in my hometown, I'd never thought of making scrambled eggs with tofu until I went vegan. So when I first saw tofu scramble (I don't really remember when and how I got to know about it), I was quite amazed by its looking! After months and months, I became vegan and I've been loving in this recipe a lot! Whoever it is, I do appreciate that someone on this planet created this fantastic scramble and spread around the world for vegans!

To make it look and taste like eggs, these are what I use:

  • Kala namak
  • Turmeric

Kala namak is an Indian black salt mostly used with other spices called masala, according to my Indian friend whom I met here in Canada. Due to the sulfur content in kala namak,  tofu scramble can be tasted like real eggs. Speaking of kala namak, I posted an article about salt a while ago. Please refer back if you're interested in learining :)

In terms of the yellow bright color, I added a small amount of turmeric to combine with tofu before stir-fry so white tofu can be colored in yellow just like eggs :)

After several experimetns with kala namak, I've discovered that the eggy flavor tends to fade away when it's overly applied to heat. Therefore, sprinkle kala namak over the scramble after you turn off the stove heat.

Eggy Tofu Scramble
INGREDIENTS (2 Servings)
350g tofu
2 teaspoons turmeric
3 cloves garlic, minced
Avocado oil
1 carrot, diced
1/2 onion, diced
1 cup spinach, cut in 3cm
Black pepper
2 teaspoons kala namak

INSTRUCTIONS
  1. Put tofu and turmeric in a bowl, then mix together smashing tofu into pieces.
  2. Heat oil in a frying pan, add in garlic to cook.
  3. When aroma comes out, add in onion and cook until golden brown.
  4. Add carrots and tofu into the pan, then stir fry.
  5. When tofu is fully cooked, turn off the heat.
  6. Then add in spinach.
  7. Sprinkle black pepper and kala namak to taste.
  8. Enjoy!

NOTES
◎Better add kala namak at the end of cooking since the flavor disappears as it cooks.
