I've created this chocolate covered cookie recipe randomly the other day, and I found it so delicious and easy to bake! And I decided to share this amazing recipe with you guys today :)

Since I substituted all purpose flour with coconut flour and rice flour, even people with gluten allergy can enjoy. Not only is it suitable for your own snack, but also it is great for you to give it to someone you love, like friends, parents and partners as gift! They'll love it for sure ;)

By the way, I've lately heard a lot that monkeys in Thailand and other Asian countries have been abused by coconut farmers in terms of harvesting coconuts. Those monkeys are chained all day long and forced to harvest coconuts like a slave.

Thus, vegan should be really careful which coconut products to choose from a wide variety of them!
Brand that I always buy coocnut products is from nutiva which is officially ceritified organic, gluten free and vegan. According to Animal Planet's investigation, nutiva coconut products are all animal cruelty free, which means they don't use monkeys AND they are fair-trade! Even though it's relatively high in quality, it's not so expensive. So I do recommend you choosing this brand, nutiva!
To be honest, I actually didn't like coocnuts at all before, but thanks to nutiva, it did change my taste buds💛

Nutiva Organic Virgin Coconut Oil, 444 ml

One important thing regarding coconut oil, choose VIRGIN coconut oil instead of refined one because refined coconut oil is highly processed and it may lose some good nutrients which means the quality is now lower than it's used to be.

This is coconut flour that I use for baking. When coconut flour is used in cookies, they become flakey and have light texture comapred to regular cookies.

STEP1

First, put coocnut oil, maple syrup and pure vanilla extract into a bowl to make it creamy.

STEP2

Then, add rice flour and coconut flour to make dough

STEP3

Form into a tiny ball.
If too floury, add some more coconut oil to give it moisture.

STEP4

Bake in an oven.

STEP5

Cover with chocolate ganache all over the cookies and top with coocnut flakes. Cool in a fridge.

Vegan🌱Chocolate Dipped Snow Balls
INGREDIENTS (15 balls)
4 tablespoons coconut oil
1 1/2 tablespoons maple syrup
1 teaspoon pure vanilla extract
1 cup rice flour
1/2 cup coconut flour

[CHOCOLATE GANACHE]
1 can coconut milk
1/4 cup vegan dark chocolate chips

INSTRUCTIONS
  1. Preheat oven to 355°.
  2. In a bowl, put coocnut oil, maple syrup and vanilla extract, and combine together until creamy.
  3. Add in coocnut flour and rice flour to make cookie dough.
  4. Form into a small ball and place on a baking pan.
  5. Bake for approximately 15-20minutes until light brown.
  6. While baking cookies, make chocoalte ganache.
  7. Put chocolate chips and coconut milk (only coconut cream) into a small bowl.
  8. Do double boiler to melt the chocoalte and cream.
  9. When chocoalte and coconut milk are melted and well combined, let it sit in a fridge until thickened.
  10. When cookies are fully baked, let it cool down.
  11. Then dip them into chocolate ganache, or pour chocolate ganache over the cookies to coat.
  12. Top with coconut flakes in the end.
  13. Transfer to fridge for chocoalte to harden.
  14. Enjoy!

NOTES
◎Put your canned coconut milk into a fridge for overnight to separate coconut cream with coconut water.
◎Use only coconut cream. Don't disgard coocnut water because it is good for making smoothies!
